*Update* Sometimes Kids get Sick

My poor baby is still sick. He had one small sip of water yesterday and it made him sick about 1/2 hour after he drank it. No food all day - he was just lazy. He was able to keep down a piece of toast and a sip of water this morning. Seems to be a little better, but still has the "Diarear" as he calls it.lol.... Poor thing had an accident on himself, and started to cry. This "bug" has also given him a diaper rash, so I think thats why he was crying - his butt hurt.
Just an FYI for those of you without kids yet, NEVER USE A BABY WIPE ON A BABIES BUTT THAT HAS A DIAPER RASH----THEY WILL SCREAM.

I had to call out again today to stay home with him. My boss didn't seem too happy, 2 days without the office manager, things can get a little backed up. Oh well, my kids are the most important thing in my life, and they knew that upon hiring me. I will be back in there on Friday and I will be running around like a chicken with it's head cut off. But everything will be taken care of before I leave for the day, so Monday we can start fresh. I work best under pressure!!!!

Sometimes Kids Get Sick

For the last 2 days, both my babies have been trying to fight off a cold. At 6 and 3 years old, I know they can take cold medicine and be fine. This morning, both were coughing and hacking, so I give my son - the 3 yr old some Mucinex cough med. AS SOON AS IT TOUCHED HIS LIPS----HE THREW UP. So I thought it was just the taste and texture of it that made him get sick. So we loaded up for Daycare. Almost to Daycare my son starts crying for no reason. He tells me he "got sick in his mouth". Well we get to Daycare (this is where daughter gets on bus, so we had to go), I put her on the bus, and he got sick ----all over daycare floor. Needless to say, I had to call out for work. You can not ask another person (grandmom, or aunt) to watch a kid that's sick with a contagious stomach bug. It just isn't right.

A friend of mine who is a RN at a pediatricians office told me it was making it's rounds. You can't give them anything to make it go away. It just has to work it's way out of the system.

In 2002, hubby was in the hospital for 3 days with it - after me forcing him to go b/c he had already been sick for 4 days. As soon as we got him there, I come down with it and developed a severe bladder infection also, all while I was 7 months pregnant with my son. So he was in a room and then they took me to the maternity ward. Talk about a mess. At that point, you have to ask for help from family members. Someone had to watch our daughter. Someone had to go in and disinfect our house. Someone had to let the dog out. Both our families were troopers. Everyone got sick. my mom, his mom, both my brothers, his Aunt, his nephews, his step mother, his father, my father, my great aunt, and everyone at Daycare. I vowed to never do that again!! Thankfully, we haven't got sick like that since. At least not all at the same time.

So all I can do for my poor sick baby is basically give him whatever he wants. Make him comfortable and try to keep him from crying (crying makes him get sick more). It makes you feel helpless when you can't fix a boo boo. I will give you an update later.....

Daily Recipe: Bacon Wrapped Meatloaf

Ingredients:
3-lbs hamburger 93% fat free
1/2 -sm can Manwich
1-lb bacon - uncooked
3- eggs
3-pcs bread soaked in milk til soggy
salt
pepper

Set bacon aside. Mix all ingredients well - to get it well mixed, I use my hands, sans jewelry, thoroughly washed!!!! Ok, take the bacon out of the package and pull apart in slices and drape over loaf pan ( i wish i could draw this out for you!) if the loaf pan is horizontal, place bacon vertical across the whole pan. Best I can describe. Back to your meat. Pack meat together and place in loaf pan on top of bacon. Shape it nicely. The pieces of bacon hanging over the edges of pan- bring them up and lay them on top of burger mix. Take a couple extra pieces of bacon and lay on top however you want. Cook 375 covered for 40 minutes, then uncovered 20 minutes. Always (check the temp of meat before serving. ) I serve baked potato or fried potatoes with this.

In the ingred. I suggested 93% fat free burger b/c the juice cooks out, then you have to drain your meatloaf, I know, I did it. And you may still have too a little bit. The bacon gets really crispy and adds a nice flavor to the plain 'ol meatloaf. I make this meatloaf up the night before so hubby can pop in oven when he gets home and dinner is done when the kids and I get there.

OK, Now Tell Me The Truth, Did You Just Lie To Me?

For all you English buffs out there, I know this title is all wrong. But you have to have to understand kids.

My precious daughter has learned how to lie. Simple lies. Little white lies. She is terrible at it. At 6 yrs old, she has lied to me. I am still in shock.

My daughter is perfecting her writing and reading skills. She writes words on anything she can write on, computer paper, Kleenex, writing tablets - mine - her fathers - hers - any ones. This is where she lied and how she got caught.

I have been working on my hubby's business end of year tax info. Last night I went to print out a couple invoices to review and there was no paper in printer. There was no paper in the normal storage spot. A little voice in me said "Self, ask daughter" she likes to write and is always looking for different things to write on. I asked her if she knew where the paper was and she said "Hold on" she come back with all my paper. I asked her where it was and she said " In brothers room"

BUSTED!!! She can not lie. Thank Goodness. I looked at her and said " OK, now tell me the truth, did you just lie to me? " "Ok, the paper was in my room---but I just wanted to write on it, am I in trouble?"

Her father was a witness to the whole scenario, stepped in and took over. Daughter is a big DADDY'S GIRL, so if he raises an eyebrow to her, she falls to pieces. He explained to her in one of the calmest voices ever about how lying is not good,Duh. How little lies turn into big lies, and how people do not like being lied to. Also about lying and getting other people in trouble. She melted.

It may seem harsh of a talk over that little of a lie, but we wanted to put a stop to that now. There is a sign just inside my front door that reads

" Honor Code"
I shall not lie, cheat or steal,
nor tolerate those who do
I am still in shock, she lied to me. She probably will again, as I did to my parents.

Scrapple

For you readers not from the Eastern Shore, I want to share a great food with you.

Scrapple is.....well scraps. I know it sounds gross, but it is soooo delicious! You purchase it in a block - like cheese - sort of. To cook it, you slice it and cook over medium heat in an ungreased pan, about 7 minutes on each side til golden brown. It's crispy, it's warm, it makes me happy!!!

This is a breakfast meat just like bacon or sausage. I like mine as a sandwich with a fried egg and cheese. A tall glass of cold milk is a nice compliment. Some people like it on a sandwich with mustard, some like it on a plate cut up.

Delaware and Maryland carry scrapple. However, Cracker Barrell in these states do not offer it. Shame on you.

There are various brands, RAPA, Hughes, Miton and probably some more I don't know about. I used to prefer RAPA, but lately it has too much filler - like a bad crab cake. I recently purchased some of Hughes brand, and it was better, a little greasy, but better tasting.

So if anyone visits these states, ask for it. It will not disappoint you.

Daily Recipe: Crab Dip

Ingredients:
2 - 8 oz. pkgs Cream Cheese
1/2 - pint Sour Cream
4 - tbsp Mayo
1 - tbsp. Lemon Juice
3 - tsp Worchestier Sauce (however you spell it)
1 - tsp Dry Mustard
3 - shakes Garlic Salt
1 - lb. Backfin Crab Meat
1/2 - cup grated Sharp Cheese

Mix well all ingredients, except Cheese & Crab meat. Slowly fold in Crab Meat & 1/4 cup of Cheese. Pour into 8x8 or 9x9 Casserole dish. Take remaining cheese and sprinkle on top. Cook on 350 for 35 minutes, or until crispy on top.

Tip: Serve with a lightly toasted sub roll, cut in slices or with plain toast, or crackers.

I have not blogged in a while, as you know!! I have been out of town w/ work, attending family functions, and spending time with my kids. Saturday I will be posting quite a bit to catch up, so to speak. I will have several new recipes, some news stories and a couple odd and end things. So, hang in there, "I'll be back" ....lol.....

Daily Recipe: Feedback for BBQ Cola Ribs

A big 'ol Thank you goes to www.twodatediva.blogspot.com for trying my recipe.

I got great feedback from her. Please visit her site and read what she has wrote. Like I commented to her, giving out recipes can go one of two ways:
1. It turned out horrible.
or
2. It was fabulous.

In her case, they were perfect. Just like I was praying for. So I challenge my readers to try these recipes and give me honest feedback.

You know, when I decided to post daily recipes, I was scared no one would like them, considering everyone has different tastes. But the support has been overwhelming!!!! One day I will produce a cookbook with all my recipes compiled, but until then, please give it a try, give me some feedback, and enjoy!!!!

Some People Just Don't Understand

What it takes to live, I mean. To understand where I am coming from here is some dialogue to help you out:

BM: Well, my landlord kicked me out.
Me: Did you pay your rent?
BM: The General contractor I sub off of hasn't paid me in a week, so I didn't have the money.
Me: Hasn't paid you in a week? And b/c of that you can not pay your rent?
BM: Sounds right.
Me: Are you serious? You miss one week, the week before your rent is due and you can not pay your rent so you get evicted?
(this is me, getting irritated)
Me: Are you still working for this guy?
BM: Yes, I feel sorry for him.
Me: Sorry for him? What about you? What about you money?
BM: I don't know.
Me-again: Didn't you know this time last month your rent would be due?
BM: Yes, but.....
Me: What have you done with your last 3 paychecks?
BM: Well, I went to the bar a couple of times, took my girl out to dinner, bought a new cell phone.
Me: How much do you spend at the bar on average, a night?
BM: About $100.00, and I go about 3 times a week.
Me: So the Bartender got your rent money?
BM: Basically.
Me: You are pathetic.
Me-again: So where are you going to move?
BM: Back home with mom.
Me: BACK HOME WITH MOM!!!!!! YOU ARE 29 YRS OLD.aRE YOU f$#^%ING CRAZY?
BM: Why are you so hard on me? You just made me feel like a piece of shit.
Me: Good, maybe next time you have rent due, you will think back on this conversation.
BM: Man I wish we weren't related, I need a woman like you to keep my a$$ straight.
Me: As long as you act irresponsible, you will never get woman like me b/c she will not tolerate your dumb a$$.

Now mind you, BM is a relative so I can have this kind of open dialogue with him.
No matter what you have to work and pay bills to make it in this world. Unless a. you got a big trust fund. b. your parents are filthy rich and will pay for everything. or c. You married into money and don't have to work. For those of us in the real world, a. b. or c. do not apply to us. I just don't understand how someone can act/sound/be soo stupid. Now if BM's mom would not let him move back in and made that clear some time ago, he might have thought twice about blowing his money. Now, I am not blaming this on BM's Mom at all. She is a mother and would do just about anything for her kids, as most mothers would.

My point is BM knew he could come back home no matter what. Now me on the other hand, no. I mean I could if I needed to, but I have been on my own (by choice) since I was 17. Paying rent, and utilities and working my arse off. It would hurt my pride to have to go back home. Did BM miss the memo about Independence and the payoff that comes with it ( respect)????? I am sure glad it didn't pass me by.

Daily Recipe: BBQ Cola Ribs

Ingredients:
1- family pack of Country Style Pork Ribs
1/2- can Coca-Cola
1-Lg jar of KC Masterpiece Hickory BBQ sauce
1/2 - onion, diced
Salt
Pepper
McCormick's Pork Seasoning

In large stock pot, add a little drizzle of oil, ribs, salt, pepper & Pork Seasoning. Over med-high heat, get ribs nice and brown all over as much as you can (approx. 10-15 min.) Keep heat the same, add in Cola, onion and 1-cup of BBQ sauce. Put a lid on it. Stir frequently. After about 20 minutes the sauce should be pretty thick, and bubbly. Add in rest of BBQ sauce, more salt, pepper and Pork Seasoning to taste. Turn heat down to very low, re-cover with lid and let it cook about 1 hour.

Meat should fall right apart when done. I recommend cooking this on a day off, as it is time consuming.

Daily Recipe: No-Bake Chocolate Oatmeal Cookies

Ingredients:
2-cup sugar
1/2-cup milk
6-tbsp cocoa
1-stick or 1/2 cup margarine ( I used Blue Bonnet brand)

Boil these ingredients for 3 minutes med. heat in med. size dipper

Turn off heat, but do not remove pan from stove top. Add:

3-cup oatmeal - quick cook
1- cup peanut butter
1-tsp. vanilla

Stir well and stir fast. This recipe sets really quick.
Drop by teaspoonful full on wax paper. You will know within the first 5 minutes if cookies are going to set. Cookies will have a dull appearance. Let cool. Makes about 2 dozen depending on how big you like your cookies.

Daily Recipe: Zucchini Bread

Ingredients:
2- cup sugar
2- cup flour
4- tsp. cinnamon
1/2- tsp. baking powder
1- tsp. baking soda
3- eggs
3- tsp. vanilla
1- cup chopped walnuts
1- cup oil
2- cups grated zucchini ( with or without skin, your preference)

Blend all dry ingredients. Beat in eggs, add in oil, zucchini and vanilla. Mix well. Fold in chopped nuts. Bake 325 1 hour in greased loaf pan. This recipe makes 2 loaf pans. One for you, one for a friend.

Best served warm. Store in fridge. Kids love this bread, especially with a scoop of ice cream!

Daily Recipe: Chicken Pot Pie

Ingredients:
5 - boneless, skinless, chicken breast, cooked & chopped
1-cup sliced carrots
1-cup peas (can-drain first or frozen)
1- can cream of celery soup
1 1/2 - cups chicken broth
1/2 - stick of butter - sliced
1- pkg Pillsbury Grands biscuits ( the one with 8 biscuits)

Mix cream of celery soup, chicken broth together in bowl - set aside. Take chopped chicken, carrots and peas, place in 9x13 pan, put sliced butter evenly over that. Pour soup mixture over top. Place biscuits evenly over top. Cook 325 for about an hour or til top is golden brown.

My Take on Marriage and Couplehood

No one is perfect. Not me, not even you. There is no "How To" book for reference. In today's time, your marriage or relationship has a 50/50 chance of surviving. Those are some pretty bad odds.

My view on marriage is like this:

Everyone has flaws (I mentioned this earlier). The object of the game is to find someone who has flaws that you can live with. Some people gamble, drink, do rec drugs, shopaholic, hordes, lazy, sloppy, fat, you name it. Every one's tolerance level is different. What may be OK with me, may not be OK with you. And that's OK. If you have been with someone for 10 years or more, you pretty much know that person inside and out. As long as that person is not abusing you in anyway, and you are not miserable, why end the relationship b/c of one flaw? Then you take the chance of trying to find someone who's flaws you can tolerate. (note: the above is just for an example)

When you make a commitment to someone, you have to stand behind it. No one goes into a relationship thinking "I want to get close the this person just so I can screw them up". No. Of course no one wants to get hurt whether accidental or intentional.

Don't be selfish. This applies to all areas of life. Those readers with children understand this very well. You have to think about the other person at all times. What do they want? What can I do for them? If I do this, how will they feel? Those things have to be reciprocated, both ways. When you become selfish, you become alone.

Just because you dreamed of a 6'0" Brunette with blue eyes (MY HUBBY) sometimes you get the 5'4" Red head with green eyes. lol..... That makes you happier than a tornado in a trailer park. ROFLMAO!!!!!! Put your heart out there and maybe someone will grab ahold of it, you normally wouldn't even talk to. Beauty is more than looks, and sometimes a great personality can make someone gorgeous.

Marriage is a great thing for those that want it. You have to want it though. Vows are not meant to be broken. A promise is not meant to be broken. Hearts are definitely not meant to be broken. If you get married, don't end it because of something so trivial or just because you need a change. Marriage and underwear are NOT the same thing.

Of course, sometimes a relationship NEEDS / HAS to end. Don't ever tolerate abuse - any form of it, from anyone. And there are other logical reasons to end things, but you have to decide is it right.

Daily Recipe: Venison Steaks

Ingredients:
3 - pks Venison thin Steaks ( about 3-4 lbs)
4 - cups brown gravy (store bought or homemade) I used Food Lion Brand in the glass jar.
1/2 - small onion, diced
Salt
Pepper
McCormick's Broiled Steak Seasoning
9-13 pan

Add Salt, Pepper and Broiled Steak seasoning to Venison steaks. Put them & a drizzle of olive Oil in Large saucepan over Med - High heat for 2-3 minutes. Just make sure they get browned. In 9x13 pan, put browned Venison, gravy, diced onions and a little more of each seasoning. Make sure venison is covered with gravy. Put a lid or tinfoil on it and place in oven 350 for about an hour. DELICIOUS!!!!
For a complete meal, treat it like a roast in the crock pot, add carrots or potatoes, whatever you like. You can not tell it is Venison cooked this way, and my god will your house smell sooooo good.

FYI: I have figured out that cooking the wild taste out of Venison is easier if you use Emeril's Essence Seasoning. (unless you are cooking it in gravy - like above)
